So I started thinking the other day( I know I didn't hurt myself or anything) when the world succumbs to the zombie apocolypse and food is scarce what one thing would i miss the most, thanks mostly to Pennsylvania who got this thought stuck in my head with his article
""Luxury food item, OR food you'll miss the most?"" and cheese kept coming back as the main item i would be missing, and with that i started looking online for ways to create my own home made cheese when i came upon this ""Article"" and thought i would share. I tried it at home and the cheese was surprisingly good melted on some flatbread, just make sure to take the advice at the end and use a pvc pressing cylinder instead of tin.

Buttermilk is the slightly sour, residual liquid which remains after butter is churned, ie. milk from the butter or buttermilk. If you have a cow, you have buttermilk. Butter and buttermilk are more stable than whole milk.
Rennet is an enzyme from the stomach lining of a goat or sheep, or a young calf. (Really any young mammal will have rennet in its stomach) Traditional rennet production involved slaughtering unwanted calves, goats or sheep and removing their fourth stomachs. The stomachs were then rinsed, salted and dried. Small pieces of dried stomach were soaked in water and then added to batches of milk. Artisan cheesemakers sometimes still make cheese in this fashion, especially in France, Switzerland, Austria, Jura and Romania.
Rennet is shelf stable in the grocery stores, and will probably be one of the things no one thinks to loot.
Generic 'cheese' is easy enough to make. And its tasty. It can be enhanced by smoking or aging, but I will miss the specialty cheeses, feta, gouda, bleu cheese, etc.

haha I love cheese too. There's this restaurant near my area that sells a pizza with nothing on it but cheese and tomato sauce. Imagine 7 different kinds of cheese for every bite... Great, now I'm imagining it again. Not really cheap to eat there, but its worth it
